A built-in outdoor grill is a serious investment that transforms a garden, terrace, or villa outdoor kitchen. Done right, it lasts decades and becomes the centrepiece of every gathering. Done wrong, it rusts, cracks, or simply doesn't cook well.
Here's what to think through before you commit.
Stainless steel vs carbon steel for built-ins
For a permanent outdoor installation, stainless steel is the right choice. It handles constant weather exposure, requires less maintenance, and keeps its appearance over time. Carbon steel is excellent for freestanding grills that can be stored or covered, but for a built-in that will be exposed to coastal air and humidity year-round, stainless steel is more practical.

Sizing
The most common mistake with built-in grills is going too small. Think about how many people you regularly cook for and add 30%. A cooking surface that feels generous during planning will feel just right when you're actually using it.
For a typical family setup, a 70 to 80cm wide cooking surface is a good starting point. For larger gatherings or more serious cooking, 100cm and above makes sense.
The firebox
A proper live-fire built-in needs a well-designed firebox — the chamber where the wood or charcoal burns. It should be deep enough to hold a good fuel load, have adequate airflow to sustain the fire, and ideally be lined with refractory bricks on the base to retain and radiate heat evenly.
Refractory bricks are installed on the firebox floor only, not the sides. This is a common mistake in poorly designed built-ins — bricks on the sides restrict airflow and make the fire harder to manage.
